RECIPE: Coconut Shrimp

Coconut Shrimp :

Coconut Shrimp

Ingredients – Dipping Sauce

1 cup pina colada mix
1/4 cup water
2 Tbl crushed pinapple (drained)
1 Tbl sweetened coconut flakes +
1 tsp sweetened coconut flakes
3 Tbl powdered sugar +
1 tsp powdered sugar
1 1/2 tsp cornstarch
3 tsp cold water

Ingredients – Coconut Shrimp

1 cup bread crumbs
1/4 cup Cornstarch
1 cup sweetened coconut flakes
1/2 cup pina colada mix
1 Tbl powdered sugar
3 Tbl vanilla
1/2 cup cornstarch
1/2 pound large butterfly shrimp



  1. Mix pina colada mix, water crushed pineapple, coconut & powdered sugar in a sauce pan over medium low.
  2. Simmer for 10-12 minutes stirring frequently.
  3. In a small bowl mix together cornstarch & water, add to sauce.
  4. Mix well and simmer another 3 – 5 minutes, stirring frequently.
  5. Remove from heat allow to cool to room temperature before serving.


  1. In a large bowl mix 1 cup bread crumbs, 1/4 cup cornstarch & 1 cup coconut.
  2. In a separate bowl combine 1/2 cup pina colada mix, 1 Tbl powdered sugar & 3 Tbl vanilla.
  3. Heat oil to 375° F.
  4. Coat shrimp in corn starch, then pina colada mix, then coconut mixture.
  5. Fry until golden brown.

I love Red Lobster’s coconut shrimp so I thought I would try and duplicate it at home! I found this recipe at cdkitchen and thought I would give it a try. I did change a few things like substituting vanilla for spiced rum. All in all I thought this recipe was very close to Red Lobster’s. However, I don’t think it is worth all of the work! But now when I am craving coconut shrimp and can’t go to Red Lobster I can just prepare it at home!
