RECIPE: Zucchini Casserole

Zucchini Casserole 

Ingredients

1 lb hamburger
3 tomatoes (chopped)
1/2 cup celery (chopped)
2 medium onions (chopped)
1 medium zucchini (sliced)
1 green pepper (chopped)
6 Tablespoons cooked rice or minute rice
2 Tablespoons Oregano
2 Tablespoons Parsley
1 Tablespoon Basil
2 teaspoons Salt
1 teaspoon Thyme
1 teaspoon garlic powder
2 cups shredded mozzarella or like cheese

Directions

  1. Brown hamburger and onion.
  2. Cook rice (if not using minute rice).
  3. In a large bowl combine seasoning then add remaining ingredients including hamburger and rice and mix well.
  4. Transfer mixture to a 10 x 13 oven save dish.
  5. Bake covered at 350° for 1 hour.
  6. Top with cheese and bake uncovered for 10 minutes or until golden brown.

This is a new recipe that I whipped up based on a friends recipe that just used dry spaghetti mix instead of the seasonings. Try it and let me know what you think! I do have to say that this smells so good cooking. Instead of mozzarella cheese I used Asiago cheese which I have fallen in love with!

I do have a confession to make… the first time I tried this recipe I was to lazy to cook the rice first so I just added the rice and 1 cup of water… well not such a good idea! We were going to eat this one night before church and I decided to let it set in the oven and eat it when we got home instead. That did give the rice time to absorb the liquid, however there was still some crunchy rice on top and well, it didn’t taste so good! So not matter what you do, cook the rice first or use minute rice!
