Zucchini Bread Recipe

Zucchini Bread


3 eggs
1 cup oil
1 cup brown sugar
1 cup white sugar
2 cups shredded zucchini
2 teaspoons vanilla
3 cups flour
3 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup chopped nuts (optional)


  1. In a large bowl mix together eggs, oil, sugars, zucchini & vanilla.
  2. In a separate bowl sift together flour, cinnamon, salt, baking soda & baking powder.
  3. Blend flour mixture with zucchini mixture.
  4. Add nuts.
  5. Bake at 325° for 1 hour and 15 minutes.

Makes: 2 loaves
